Nasopharyngeal carcinoma (NPC) is a rare tumor in most countries but with exceptionally high rate among Chinese population throughout the world. A case-control study of NPC was conducted in Taiwan to investigate the importance of salted fish and other fermented foods consumption, cigarette smoking, alcohol drinking, family history of NPC, prior nasal/ear diseases and herbal use as risk factors for the disease. Totally 375 histologically confirmed incident NPC cases (99% response rate) who were younger than 75 year old, had no prior diagnosis or treatment for NPC, and had resided in Taipei city or county for at least 6 months, were prospectively recruited from National Taiwan University Hospital and Mackay Memorial Hospital between July 1991 and September 1994. Totally 327 healthy community controls (88% response rate) were selected by individual matching for sex, age and residence. Risk factor information was obtained through personal interview with structured questionnaire.

520 $a After adjusting for confounding variables for the period of 10 years ago to 3 years ago, intake of salted eggs with increased risk for those who ate weekly (OR = 1.9, 95% CI = 1.01, 3.5 with p = 0.04 for increasing dose-response), intake of fruit of Chinese wolfaberry with decreased risk for those who ate weekly (OR = 0.53, 95% CI = 0.28, 0.99 with p = 0.04 for decreasing dose-response). Weak association was found for 10 years old. After adjustment relative to non-smokers, the OR for those who had smoked for ${>}{=}\ 25$ years was 1.8 (95% CI = 1.09, 3.00 with p = 0.02 for increasing dose-response); the OR for those who had smoked for ${>}{=}\ 20$ pack-years was 1.6 (95% CI = 0.99, 2.6 with p = 0.05 for increasing dose-response). The adjusted OR for those who with history of first-degree relatives affected with NPC was 8.8 (95% CI = 2.6, 30), for those who with history of sinusitis was 2.8 (95% CI = 1.3, 6.2). The adjusted OR for those who had used tiger balm, peppermint, or other ointments weekly in childhood was 0.51 (95% CI = 0.29, 0.88 with p = 0.01 for decreasing dose-response). While consumption of salted fish, alcohol drinking, or exposure of passive smoking were weakly associated with NPC risk.
